What is Gluten?
Gluten is a protein found in rye, barley and wheat. The word gluten comes from the Latin word for glue – which makes sense, considering how gluten helps give bread that chewy texture. Gluten is found in most cereal and grain products but can also be found in a number of other foods – however rice, corn, buckwheat, millet and quinoa don’t contain any.
